I veganized my old zucchini bread recipes today and it was sooo tasty! This recipe makes a lot-- two loaves, or one big bunt panful. But who ever heard of too much zucchini bread?

2 1/2 c whole wheat flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 c vegan margarine (such as earth balance) at room temp
1 1/2 c sugar
2 c grated zucchini (about 1 large zucchini)
3/4 c apple sauce
1 c chopped walnuts or pecans (optional)

Preheat oven to 350 degrees. Sift dry ingredients together. In another bowl, beat together margarine and sugar until blended. Beat in zucchini, then applesauce until well mixed. Stir in nuts. Add dry ingredients until just blended. Pour into two 8 1/2" pans or 1 bunt pan. Bake for 55-65 minutes, or until done.

Share and enjoy!

I am making this right now!  Cheesy
I'm bringing it over to a lunch over my Aunt and Uncle's who are vegan.  My boyfriend and I are vegetarians, and they are cooking all the rest of the lunch all from food they grew in their garden in Canada.  They grow all summer, harvest, then come here for the winter and share all their yumminess with the family here.
Well, I had my heart set on making this...and the two grocery stores near my boyfriend's house don't carry Earth Balance, so....I bought soy creamer (3/4 Cup), some almond milk (2 tbs), and vegetable oil (1/4 Cup), and used an egg beater to blend it together hoping it would be similar.  I don't know.  And the other problem is I'm really awful at baking.  So haha, it's in the oven right now, I'll let you know tomorrow how it turned out  Grin
