i found this recipie in one of my mums old dust-gathering cookbooks. the main reason it was dust-gathering is because the recipies are all in cups, and living in the uk, it just made the recipies more difficult. i just used a mug that my mum said was about the right size so the measurements werent completly accurate, but they were still the yummiest muffins i have ever made. also, i know a lot of you guys on crafster are american, and know how much a cup is so the recipie will be super easy for you. here it is:

makes 12 muffins.
preparation time 10 minutes
cooking time 20 minutes

2 1/2 cups self raising flour
1/2 cup soft brown sugar
3/4 cup white choc chips
1 cup chopped fresh mango (2 medium) OR 440g mango pieces, well drained
1/2 cup milk
1/4 cup cream
90g butter, melted
1 egg, lightly beaten

1. preheat the oven to 180 degrees c (sorry dont know what that is in other units!). sift the flour into a large bowl. stir in the sugar and choc chips and mix well. fold in chopped mango gently. make a well in the centre o the mixture.
2. add the combined milk cream butter and egg all at once. mix with a fork or rubber spatula until combined (do not over mix the batter should look quite lumpy). spoon the mixture into muffin cases in a muffin tin.
3. bake for 20 minutes, or until golden. leave to cool, then eat.

i hope someone has fun making and eating these! please tell me what you think. my family ate them all before i could get a photo, but if i make some more ill get a pic.

and you've been so many places, I guess it must be so...

just so you know 1 cup=8 oz=250 ml.

I had to figure it all out when I moved from Canada to the uk. The measuring cup I've got has both ml and oz on it.

And the recipe looks good. I'm putting it in my list of things to bake when there's time.

(edited: the measurements to be correct. oops!)

a little oopsie..actually 250 ml is equal to 1 cup.. 125 ml is a 1/2 cup

that sounds cool, but i wonder how it would taste with milk or dark chocolate....  muffins are yummy and so easy!
