I've been wanting to make Jem earrings or a necklace for ages. 

I seem to recall some kind of thin plastic sheet that comes in a pink holographic print

I have been googling my fingers off and can't seem to find anything like that.. anybody??

I think that material may work.  Post this question in the jewelry forum.  Maybe someone there knows a good material.  Ask at a craft store about material. I have seen some people make craft wings out of a material that may work but I don't know what it is.
I would love to see these!
