You will need:
2 eggplants, grilled and sliced lengthwise
2 cloves of garlic, minced
1/2 cup onion, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon allspice
1/2 inch ginger, minced
3/4 cup coconut milk/cream
1 tablespoon vegetable oil

Procedure:
1. Saute garlic, onion and ginger in oil.
2. Add grilled eggplant slices.
3. Add coconut milk and simmer until milk thickens and reaches saucy consistency.

Sounds interesting. I like eggplant and coconut but never would think to put it together. Sounds like Thai or Vietnamese cooking.

I love using coconut milk in cooking.  I like how the dish turns creamy and milky.  I often cook squash and coconut milk together.  When the squash softens, it blends and makes the sauce creamy.

Oooh that sounds like it has potential. I don't often use coconut milk, but I like it and really should go and get some.
