I wanted to come up with a sauce for chicken that would tase similar to Buffalo Wing Sauce, with out the fat. Buffalo Wing Sauce is just Frank's Red Hot Sauce & melted butter.

Simmer 2 cups low salt chicken broth till it reduces down to a little less than half.  Let it cool.
Add Frank's Red Hot Sauce to taste.
Add 1/4 teaspoon Tabasco
Merinate chicken (I prefer skinless thighs & bonelss skinless breasts.) in about half this mixture.  Use the other half to baste chicken with as you are grilling or baking it.

I wanted a salad to go with the meat. When you get Buffalo wings you get celery sticks (sometimes carrot sticks) with creamy blue cheese dressing on the side.
Buffalo Style Coleslaw
Take a tub of low fat sour cream or low fat plain yogurt. put a couple coffee filters or a couple very thick paper towles in a strainer. Let sour cream (or yogurt) drain.
Mix together 1/2 bag coleslaw salad, 5 large carrots shredded , 5 large celery ribs diced.
Add 2 tablespoons mayo
Add drained sour cream (or yogurt), I use less, just like enough to bind salad.
sea salt & fresh ground pepper to taste. Mix all ingredients well.
Sprinkle blue cheese chunks over each serving.
(if you ae not worried about fat you can omit the sour cream & just mix veggies with chunky blue cheese dressing & a bit of mayo.)

Any leftover sour cream is excellent mixed with apple cider or malt vinagar, salt & pepper. add sliced cucumbers or shredded carrot.  =) You will LOVE it!!
