This week I chipped a tooth (ouch!) plus now my throat hurts.  Maybe I'm falling apart.  All this means I require SOFT food Smiley 

This simple soup requires baked beans (yes, I know they are a British obessesion!).



Ingredients:

    * A tin of baked beans
    * One red onion chopped
    * One carrot chopped
    * Handful of pasta shapes
    * Vegetable stock
    * Salt & pepper to taste
    * A little oil
    * A generous squirt of tomato ketchup

In a large saucepan, lightly fry the onion, once soft add the vegetable stock. To this add the tin of beans, chopped carrot, tomato ketchup, pasta shapes & seasoning. Cover and leave to simmer. When pasta is soft, it is ready to serve. Simples. Due to my sore throat I served this with super squidgy soft white bread (a guilty pleasure!).

It's a rainy ho-hum day in Seattle. This recipe would be the perfect warm and cozy treat for dinner tonight. Thanks for the idea!

That sounds yummy. I love baked beans. Beans on toast is one of my fav easy meals.

I made this for dinner last night with some tea biscuits cause I have a crazy bad sore throat. It's delicious. Mine was a slight bit different cause I used chicken stock (cause that's what I had) and I added some cauliflower that was in the fridge and really needed eating. Delicious.
