I threw this together the other night. There's not really a recipe. You just cook up some chicken breast chunks, throw in a bag of frozen mixed veggies and heat them until they're steaming. Then you roll a refrigerated pie crust into a pie pan, fill it, top it with another crust, crease with a fork, and brush on a little egg white mixed with milk. Cover the edges of the crust in foil. Bake at 400F for about an hour or until golden. It was so simple and so good. I have a feeling this coming winter is going to be filled with pot pies. ^_^

I know it doesn't really have the traditional...goo that normal pot pies have. I like it that way. I have a major issue with food texture and that goo reminds me of snot too much to stand. None of my pies (fruit, veggie, meat) have any kind of predominant sauce.

I like!  My friends all tease me because I'm anti-gravy girl....    Wink  Perhaps this is the answer.... might even get my nine-year-old to eat pot pie this way!

That looks delicious! 

And I don't have food texture issues and can/will eat almost anything, but I agree with you.  The goo-snot-gravy stuff in pot pies is such a turn off for me.  Never occurred to me to just make my own and not include it!

Oh, it WAS delicious. My husband ate half the pie in one sitting. And he "hates" that kind of thing.  Roll Eyes

twilightmiracle: I have to make all my own pies and most saucy things because of texture. It's actually so much better once you get used to it. There's something about biting into an apple pie and only getting giant soft chunks of apple instead of a little apple and mostly goo. I've turned most of my friends off traditional pies in my quest to avoid that.  Grin

Mannon2: If only taking to goo out was enough to get my three year old to eat it. I'm still trying to find a way to hide veggies that he can't see through. He's too observant for his own good!

Chicken pot pie is my specialty. I too have food issues, but I do a more traditional pot pie. Your pot pie looks delicious though and I just had to share this story with you, since I forwarded the post to my younger brother.

 When I first started making it, I was still in high school and he was too young to like sauces yet.  The first time he ate it, he told me that he liked it, but asked that next time I made it, could I please make him one without the sauce.  

So, being the noble and good older sister, I said of course and then the next time I made it, promptly forgot about the promise until halfway through cooking it.  Well, there wasn't anything I could do, so I asked my mom what I should do and she told me to just not say anything and he would have forgotten about it.  

He asked before eating, which one was his special one, so I picked the one that had the least amount of sauce in it and gave him that one.  He didn't even notice and happily ate it.  This continued for a good couple of years and I finally fessed up two years ago.  Now I keep threatening to make him one without the sauce, but he likes it now, so it's okay.

Do you consider cream sauce "gravy"? That's all I use for chicken pot pie. Milk plus flour and butter to thicken a bit. It's so dry otherwise.
