sorry for lack of pic.. it was all gone before I had the chance [always a good thing]

this recipe is based out of my WWII-erc Woman's Home Companion Cookbook, which is the best and most comprehensive cookbook I have ever owned. Seriously, you could find just about anything in here.

I find that banana bread is a universal-treat because not only is it effective in satisfying hunger [especially with the walnuts] but it also satisfies a sweet tooth without making you feel guilty for indulging.


flour, 1 and 3/4 cups
baking powder, 1 and 1/4 teaspoons
baking soda, 1/2 teaspoon
salt, 3/4 teaspoon
shortening, 1/3 cup
sugar, 2/3 cup
eggs, slightly beaten, 2
2 or 3 mashed bananas
1/2 cup orange marmalade [optional]
walnuts, however many you feel like [optional]
golden raisins, however many you feel like [optional]

combine flour, baking powder, soda, and salt; sift if you are really particular that way [its unnecessary]. cream shortening; add sugar gradually, beat until light and fluffy. add eggs and mix until smooth. mix dry ingredients with mashed banana and orange marmalade and combine thoroughly. add  walnuts/golden raisins. turn into a greased loaf pan [about 9 1/2 by 5 1/2 inches] and bake at 325-350 degrees for about an hour.

or just mumble it all together and pour it into the pan, which is what I did.

delicious! enjoy with butter or margerine.
