I went to an organic feria in downtown San Jose today and there was fennel!  Something you rarely see here in Costa Rica. 

I am thinking f doing a roasted beet with orange and fennel salad.

Before I commit, I thought I'd see what others are doing with fennel.

I quite like fennel chopped into chunks & roasted with other veggies.  Remember you can eat the green herby tops too!

Fennel gratin is something amazing if you eat dairy. It's also a nice addition to spaghetti sauce in small doses.

Here it is one Bulgarian recepie with fennel. You need:


You have to chop the cucumbers and mix the other stuff and add some water so you will have cold soup for the summer. Quantities are up to you. Smiley
