I made granola tonight to go in some trailmix! Yay! It's a super simple recipe too. Boil 1/4 cup each of brown sugar, honey, and vegetable oil, 1 tsp. cinnamon, and 1 1/2 tsp. vanilla. Pour it on 4 cups of oats and mix to coat everything in yummy goodness. Pour everything into a shallow baking pan and bake at 350 for 15-20 minutes, stirring every five minutes or so. Stir after it's out of the oven too so that you don't get one chunk of granola the size of your pan.

I'm posting this while I wait for it to cool, and it's proving to be a very hard wait. Darn you deliciousness of cinnamon and sugar, darn you!

MMmmm mmmmmm granola, never thought of boiling the honey or adding vegetable oil, I think I might try this one out. i just added all the ingredients and baked.

That looks delicious! 

I'm curious - do you get "chunks" of granola?  I've made granola before, and while it was yummy, it didn't form those nice little crunchy clusters that I like.  It was more just like individual oats.

Thanks guys! This one seems to stick together in nice big chunks pretty well, even after spending all day in my backpack =]. I stirred it once after it came out of the oven, after it had a little chance to solidify.

this looks super nummy...I love to get the big cluster bits of granola love...I'm gonna try this too!
