My boyfriend loves pizza, so I made this the other day out of leftovers and things we had around the kitchen.

I used:
half a package of store bought fresh whole wheat pizza dough
6 tablespoons homemade pesto [I make batches ahead of time and freeze in 1 tbs size cubes]
1 leftover grilled chicken breast, cut into strips
a small handful of baby spinach leaves
2 medium sized mushrooms, thinly sliced
1 small tomato, thinly sliced
1 cup shredded mozzarella cheese

It was seriously amazing and took I think a total of like 15 minutes to make.

My husband and I make pizza almost every Saturday night.  He makes the crust from scratch each time - he used to use a bread machine to make the dough, but it broke, so now he does it by hand.  Smiley  We're currently trying to make the pizza healthier and less caloric, so trying to add more vegs and use less cheese.

I think I could almost live on homemade pizza!

Mmmmm looks good. I have bought Pesto twice now to use on some mini pita pizzas. I've been thinking about making my own but haven't taken the leap yet. Do you have any suggestions on pesto recipes?
