while my DH is going back to school, we are on a pretty tight budget.  that means we get to eat a lot of potatoes.  Since I don't like fried potatoes, I've searched for new ways to cook these cheap staples.  I was slicing some thin with the mandoline, when I was thinking about au gratin.  I decided to make a free-form pie with thin potato slices as the crust.  And since I had some goat cheese (on sale!  yay!), I used goat cheese, leftover chicken, roasted garlic, and rosemary to top it.  It was so delicious!

Oh wow. This looks amazing! Have you ever tried to make a tortilla espanola? It utilizes eggs, potatoes and onions in a wonderful, delicious Spanish comfort food. Most of the recipes out there will tell you to fry the potatoes, but I made a version where I steamed the potatoes instead and I actually liked it a lot more!

I've never tried tortilla espanola!  I've seen spanish tortilla recipes, but have never made them. I'm not sure why!  They look delicious!  I'll have to try one with steamed potatoes! Thanks for the tip!
