This is one of my favourite puddings. Itís a traditional South African recipe thatís easy to make and doesnít take too long Ė about 10 minutes to mix together and then 60-70 minutes in the oven. I usually make it right before dinner and then itís almost ready by the time weíve finished eating and cleaning up. I like it plain, but itís also great with ice cream or cream.

While the pudding is baking, you boil the ingredients for the sauce in a saucepan. Then, when the pudding comes out of the oven, you poke holes in the pudding and pour the warm sauce over it. I've written out the recipe below.



South African Brown Pudding (Bruinpoeding)

Batter

2 cups white sugar

4 eggs

2 cups all-purpose flour

2 tablespoons apricot jam

2 teaspoons baking powder

2 teaspoons baking soda

3 tablespoons vinegar

2 cups milk

salt

Sauce

1 cup white sugar

1 cup water

2 cups milk

1/2 cup (1 stick) butter or margarine

2 teaspoons vanilla

Directions

Preheat oven to 350F.
Cream the eggs and the sugar together.
Mix in everything except for the milk.
Add the milk last.
Pour into a baking dish.
Bake for 60-70 minutes.
For the sauce, mix all ingredients together into a saucepan.
Bring to a boil.
When you take the pudding out of the oven, poke lots of holes into it with a toothpick or a large fork (thanks, gamergirL337!)
Pour the warm sauce over the pudding. (Donít pour it all at once Ė Give it a chance to soak in.
Serve warm plain or with ice cream or cream.

I suggest instead of using Toothpicks, to use a large fork to poke holes...it'll leave large holes and make it alot easier for the sauce to soak through...its like making Jello cake in a way...

whenever I see a new post and see the picture..I drool..again.  I wonder if you could leave out the apricot jam and maybe substitute something else...like apple butter or something?  I'm not huge on apricots. no offense to you apricot lovers out there! hummmmmmm.....

SunflowerSmiles - It actually doesn't have much of an apricot flavour at all (at least not to me!) I'm sure any kind of jam would work fine, though.
