Hi there! I'm looking for any advice on recipes for gluten free/soy free naan. My boyfriend has celiac disease, hence the gluten free, and also a soy sensitivity...I've been trying mixes of rice flour and tapioca flour but I haven't found anything that's super tasty. Any insight would be lovely. Thanks  Smiley

maybe this will not sound to odd, but I use rice (washed 3 times until water is clear and then air dried), barley, beans (black, red kidney, pinto) ground up in my blender to make my "flour".  just make sure there are no stones in the beans (i rinse and spread out on a baking sheet w/ a fan blowing on the beans to dry quickly) then just add to blender and pulse, use a fine mesh sifter/strainer to separate the flour from the big bits of grains, then cycle through the blender again.

the rice and pinto flour makes a very good tortilla.
the black bean flour makes a wonderful pita.

Gluten is in barley, so don't use that! I just found a couple weeks ago that I am allergic to gluten, and was looking for a naan recipe as well! The beans don't sound do crazy to me, but def. don't use barley, I'm sure you could use something as a substitute.

I make naan using this recipe from Artisan Bread in 5 Minutes a Day

Here's a post from their blog giving a method for making naan.

I've had great luck with the breads from this book.  Even my husband (who is not gluten-intolerant and eats wheat breads on a regular basis) happily eats the bread from these recipes.
