I've been making plushies lately, and I'm having trouble with the hidden stitch to sew them closed after stuffing/sewing on noses/etc.; I end up bunching my fabric quite badly.
Am I doing something wrong to make it bunch? :/

Try sewing the stitches smaller. Put a pin in the center of the hole. It may help to sew a loose stitch just to control the opening, then go back over it a second time with a smaller stitch. Another idea, try sewing a stay -stitch with the machine where the opening will be  before you sew the seams . This should help keep the opening from stretching out too much when you're stuffing it.  If you post a photo, it may help narrow down the reason for the problem. K
