I have been asked to teach a monthly craft class at our local senior citizens center.  It would be held in the morning before lunch, so time is limited to about 2 hours.  We live in a small community, so I'm guessing there wouldn't be over 10 (we'll be lucky if we have 5!)  Cheesy  I need some project ideas that would be suitable, especially since I don't know the experience level.  Here are some of the ideas I've come up with so far:

Rubber stamping/handmade cards
Stamped stone coasters
Simple beaded bracelets
Decorated votive holders
Polymer clay pendant/pin

I would like to stay away from items like macaroni angels and plastic canvas, as I think they have already done these types of items. Thanks for your thoughts!!!

not sure what you will think of these, but here are a few ideas perhaps using a quick dry pain on some of these ideas due to the time issue:

painting a small flower/veg pot, then plant a small plant in the pot

painting a small wooden welcome/name sign (if they are in a nursing home/assisted living facility, my grandma managed a assisted living facility and the ones that lived there always wanted the signs on their room doors), maybe if they need help someone else could put their name or put welcome on the sign, then they could decorate it

use pinecones (with some type of string), put peanut butter on it then cover with bird seed or you could make another kind of bird feeder or maybe a bird bath

crochet or knit a dishcloth

Fabric yo-yo keychain-makes a good gift idea
I saw a website were someone had made a fabric yo-yo (using the clover yo-yo devise), then put a charm or button where the hole is and the had a little ring part to make it a keychain. it was pretty cute. http://www.lazygirldesigns.com/blog/?p=1622 (I have a pattern that is from sewthankful.com)

those are all of the ones I can think of now, maybe if you need help in ordering supplies for things you might be able to find a craft shop that would be able to donate to to you or cutting costs for you.

here are a few more ideas, which I have seen at craft stores that are pretty cheap to buy:

decorate a wood photo frame
decorate a small "treasure" box, to hold small items perhaps jewlery, etc.
scrapbooking a photo album page with photos/stickers, etc (kinda of like creative memories)
painting a small vase or other small glass trinket item

Take a look at these and see if any of them might work:

String Art Valentine Wreath

Mineature Spring Hats

Yarn Bugs (many themes)

Loopy Paper Wreath (color and theme can be changes for the season)
