I don't know how many people do this or even make their mashed potatoes homemade these days, but here's a little extra ingredient that makes them oh so good.  Eggs!

I know simple right. When you are boiling the potatoes then hardboil the eggs at the same time.  When it's bubbling then cool it off with cool water, Peel the eggshell off. Chop them up into small sizes and then add them to the potatoes when you mix them together on a fairly high speed.  It gives it an even better taste and I've yet to find anyone else who does this.  I think it's suppose to be some secret family recipe but come on its just eggs.  I think everyone should enjoy the great food that I get treated too, especially at Thanksgiving.

EDIT: She also adds a little bit of milk and some butter but I think thats more to taste.

Sounds interesting!  I love to make homemade mashed potatoes...will give this a try sometime  Smiley

My partner does this but a little differently. when he's mashed the potatoe a little bit he puts the raw egg in and continues mashing till it's the consistency he likes Smiley I know it sounds horrible but none of us have been ill from it yet .

actually, i found some obscure irish casserole-like dish once before that had hardboiled egg in a potato dish, and i loved that contrast of textures. never thought to put it in my mashed potatoes though =D

the dish i made was like, potatoes with a white sauce mixed together, with onions and chopped hardboiled egg, put into a dish, topped with breadcrumbs and butter, and baked =)  was really pretty good and simplistic

i definitely got to try to egg in mashed potatoes though.

i ussually love tons of roasted garlic (a whole head to 3-4 potatoes works for me, haha) and caramelized leeks or onions =D  and plenty of pepper

Do you add the yolks as well?  Or just the whites?  Does, mixing it up totally emulsify the eggs?  Or can you definitely tell the eggs are in there due to the change in texture?

I was taught to whip my potatoes with chicken broth its pretty tasty!  Or just lots of real butter and milk
