I am searching for a tasty but healthy muffin recipe that uses whole wheat flour, fruit (dried or fresh) and is as healthy as possible. 

I love to snack on breads and crackers.....anything bready or crunchy.  So I was thinking a hearty muffin might be perfect.

I use Bob's Red Mill 10 Grain Cereal mix and whole wheat flour instead of regular all purpose, and I add Craisins in addition to the apple and carrot.  The grains stay a little crunchy, but all the fruit makes them really moist.  I've been having them for breakfast all week this week, actually.

i can give you my banana loaf recipe.  I make it with banana's or zucchini, or pumpkin and toss in a handful of berries: blue, cran, raisins, etc and its easy to swao a muffin tin for a loaf pan
theres no order to this recipe, just blodge it all together in a bowl a la urban chef guy.
3 big ole mushy gross bananas or 2 cups apples, zucchini or pumpkin.  if the last two, drain some of the water off when you thaw it & if its fresh, don't bother
1 egg
1 kids tub of yogurt
1/2 cup bran - you can change this up with the germ & flax so long as what you use is a cupful
1/4 cup wheat germ
1/4 cup ground flax
1 cup whole wheat flour
1-1/2 tsp b. soda
- it will seem kinda "dry" looking and kinda like you need to add flour, but don't & you probably won't need to mix it with a mixer, I just use the fork i mashed the bananas with
add your berries, raisins, apple chunks, or choc chips etc
bake 1hr @325 in a papered loaf pan or a muffin tin
- yes its really dark brown inside when its done, but thats the bran and flax etc.  its fine
