I'm making a jacket out of 100% wool but it has ALOT of seams and i want it to all lay flat and look nice.  But i dont know if I can iron it or if so, what setting to put it on.  Our iron goes from 1-6 and 4-6 are "steam" settings (I suppose).   What do I do?

I'd assume you can iron it... yes I know i'm not a lot of help...

Try on a scrap of fabric, and maybe use a press cloth just to be on the safe side.

Good luck.
