Does anyone have any recommendations for books for sewing clothes with knits/stretch fabrics?

(more suited to someone with experience sewing, just someone who has not done much with knit/stretch fabric and wants to improve technique and give a more professional finish)

Try Wendy Mullin's Built By You Home Stretch book.  I've since conquered my fear of knits and am obsessed with making stuff with with them!

I second nyssa 1231.  It's a great book.
