I made this last night when I was so so so hungry and dinner wasn't going to be ready for a while.  I'm no stranger to hummus and last night I felt like switching it up a bit so I added a bunch of stuff I don't usually add.  It was quite a yummy experiment!

Eccentric Hummus

1 can garbanzo beans, drained and rinsed
1 can soybeans, drained and rinsed
3 cloves of garlic, minced (I would have used more but this is all we had)
2 TB lemon juice
2 TB tahini
1/4 cup cilantro
handful of raw spinach
big pinch of salt
3 TB chili garlic sauce like Sambal Olek

Throw everything into a food processor and process until smooth.  You may have to add in some water, depending on how thick and chunky you like your hummus.
Serve with tasty papadums!

That sounds (and looks) very tasty! I saw the little picture on the front page and immediately knew it was hummus. I need to make it more often, it's sooo good. I'll have to try your version next.

That sounds soooo delicious. I am a huge fan of hummus; I think of it as the perfect food. I am going to try this variation for sure. Thanks for posting!

I like hummus, I like it spicy - so I bet yours is yummy. I found I have a love for french fries dipped in hummus...

I really love hummus, but I've never made my own. I like the thought of sneaking in a few extra veggies to mix it up a bit. Great idea!
