I had this escarole and bean dish over polenta this week for dinner and it's wonderful.

In fact, I'm sure bean/tofu/tempeh dishes are your friend.

Hi, i'm a brand new raw foodist (5th day and counting!).  I've been experimenting with a lot of those recipes and the "meats" have been begging for me to experiment.  I would try some of those b/c most raw recipes (that i've come across) don't use wheat in anything and instead use alternatives like quinoa (a grain), oats, barley, & various nuts ground into a flour-like substance.  As far as "meat" try some raw nutmeat recipes (be careful about allergies) that make "meats" with a good consistency.  My first one will be "burgers" this weekend! 



Are two sites that I highly recommend especially goneraw.com which has a search function.  Raw food is absolutely amazing and is by no means a salad only diet, lol.  The things people make that are raw ("cheese" cake, cookies, breads, "meats", etc.) are all so yummy & healthy.  Hope this helps!
