Yum! This is how I do my chicken and turkeys as well, I just don't melt the butter. I let it come to room temp so it is easy to mix the herbs into. Sometimes I will throw in an onion, or a halved lemon into the cavity, for steam and flavor. I would say I make a chicken like this once a week, it is super yummy and a really cheap way to get a few meals for the rest of the week. I brined my turkey this year for the first time, it went really well, just don't stuff your bird, the juice it gives off is kinda salty. Perfect to dunk the meat into before serving, but the way to salty for stuffing. I think I may have found what I'm making for dinner tonight! Cheesy

Thank you again Sweets! Thanksgiving was at my house this year and your recipe will now be a forever one!!! I took a quick picture before my BFF carved it.

Pathetic looking turkey but it came out delicious. (I used a huge amount of white wine inside before I stuffed it. lol. Came out great)

Dude that looks wicked! I've never liked turkey because regardless of who made it, the turkey was always dry and gross. Even drowning a piece of turkey in whatever couldn't prevent me from tasting the grossness. But every time I see a turkey that looks really good, gives me hope that I will find one that I can eat and enjoy.
