My fiance is crazy about white chocolate, so when I made him dinner last night for our Christmas (we're both going to be out of town with our families: him in Knoxville and me in Disney World) I wanted to make something special with white chocolate. Lo and behold, I found this cake. It's amazing!

CAKE
1 package (18.25 oz) white cake mix
1 1/4 cups water
3 egg whites
1/3 cup vegetable oil
1 teaspoon vanilla extract
3 1-oz squares white baking chocolate, melted
FILLING
3/4 cup semisweet chocolate chips
2 tablespoons butter
FROSTING
1 16-oz can vanilla frosting (I used the reduced sugar kind)
3 1-oz white baking chocolate, melted
1 teaspoon vanilla extract
1 8-oz carton frozen whipped topping, thawed
1/2 cup white chocolate chips

In a mixing bowl, combine the dry cake mix, water, egg whites, oil, and vanilla. Beat on low for 2 minutes. Stir in white chocolate. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean.  Cool for 5 minutes.

In a microwave or small saucepan over low heat, melt chocolate chips and butter and stir until smooth. Carefully spread over warm cake. Cool completely.

In a mixing bowl, beat frosting. Stir in white chocolate and vanilla. Fold in whipped topping and white chips. Frost cake. Store in the refrigerator.

(I'm actually eating this cake right now...it's ohmazing!)

This sounds so good! But I do have one question (and please forgive my ignorance). Do you spread the chocolate on top of the cake and then after it's completely cooled you frost over it? Or did I misread something?

Oh, yes, sorry. The melted chocolate fudgey goodness layer cools completely, then you frost.

And I just have to say that Patch loved this cake so much that he went out the next day, bought ingredients, and made me coach him through making it so he could take it to his grandparents' house that night. His very first cake; I'm so proud.  Cheesy
