Here is my dilemma, instead of ordering take-out all the time, several employees (i.e. family members since it is a family business) have decided on making slow cooker meals for lunch. But all that seems to be popular are heavy meat dishes; they'd probably complain if I picked only meat-free dishes. It's easy to sneak one in every now and then, but I'd never get a full week of meat-free.

Anyone have any ideas for some really tasty slow cooker meals that are vegetarian? I don't know that I would be able to use meat-free alternative products (might get away with tofu if I sneak it in; they'd notice most likely though...).  Embarrassed

Any help would be greatly appreciated. Thanks!

What sort of meals are you looking for? I have just bought my family a new vegetarian slow cooker book. I have not had much of a chance to read it, but the snacks section has a couple of nice nut dishes. Most of the bean dishes rely heavily on strong spices.


There are tons of books on amazon too.


Sorry I don't have any recipies to offer yet. Still trying to figure out the crockpot thing.

I am basically looking for a simple lunch meal to make; nothing too heavy. I don't like sitting around with a heavy stomach all day at work. Rather do that at home so I can lounge around after eating.  Roll Eyes

Thanks for the tips on the books. I will check them out.
