I found this recipe in one of my grandmother's cookbooks from the 70's. Whipped it up for thanksgiving and it was DELISH! ... and I don't even like stuffing! Wink Give it a try!

6 slices of bacon
2 stalks of celery, chopped
1/2 medium onion, chopped (more if you'd like)
2 eggs
1 1/4 c. chicken broth
1 tbsp parsley flakes or fresh parsley, chopped
1/2 tsp poultry seasoning
6 cups dry bread cubes

* In a skillet, cook bacon until crisp. Remove from skillet. Crumble bacon & set aside.
* Cook celery & onion in bacon drippings until tender, not brown.
* In bowl, combine egg, chicken broth, parsley, poultry seasoning, crumbled bacon, cooked celery & onion.
* Add dry bread cubes. Toss lightly until well mixed.
* Add more broth if the mix is too dry. It will dry out a lot in the oven.
* Form into balls. Put in greased muffin pan.

Bake @ 325 degrees for 25 - 30 minutes. Makes appx 9 stuffing balls.

Since I haven't posted enough to post images, here's a link to the photo of the stuffing balls we made: http://www.randomology.org/thanksgiving072.jpg. We didn't ball these up well enough. These are more like half serving stuffing balls. Smiley We did another batch and they came out perfecto! Don't have pictures of those, though. We ate them up :\ This will have to do. Smiley

Yeah. We went light on the celery. The second time we chopped it up very small in the food processor. That helped! Smiley
