Topic: Vegan Root Vegetable Stew  (Read 2666 times)

I made this stew tonight, and it is SO GOOD and SO EASY! Here's what you do:

Chop up:
2 large potatoes
3 carrots
1 parsnip
1 yellow onion
1 bunch broccoli

Put in a pot with:
2c water
2c vegetable broth
1/2 c lentils
chopped garlic to taste
1 tsp cumin
1/2 tsp pepper
1 tsp salt

Stir it up and boil it for about 30-35 minutes, or until the lentils and potatoes are good and soft.
Serve with a good beer.  Grin or whatever else you like with stew.
It's a bit like a vegetarian version of pot roast, really- not a very sauce-y stew, but excellent all the same. And great for you!

Wow that is so easy!  I've been a Vegetarian for 6 years and I'm a horrible cook, my Boyfriend usually does the dinner, so this is so easy for me to make! Your dish looks so hardy, which I love in the Fall.
Oh, I could add ginger to that right?  I LOVE ginger!

I haven't had any appetite lately from being sick, but I gotta say, that looks reaaaaallly good. I might have to ask my mom to trust me not to burn the kitchen down so I can make it =P

Made this for dinner tonight, it was delicious!

I didn't have any lentils so I substituted split peas, but other than that followed the recipe.
