I just made this up today, and it was very delicious.  Sorry no pictures.

1 onion Diced
2 stalks of celery diced
2 tbs Olive Oil
3 cloves garlic
1 butternut squash in large cubes
1 tbs dried Sage
4 cups Low Sodium Chicken broth
Salt and Pepper to taste
1 Dash Pumpkin Pie Spice blend

Saute over medium onion garlic and celery in olive oil (with a few dashes of salt) for 10 minutes.

Add butternut squash and saute for 5 minutes.

Add sage, pepper, and Chicken broth.  Bring to boil.  Once at a boil lower stove to Med/Low and simmer for 30 minutes.

Either puree in batches in the blender or use a stick blender. 

Serve and eat.

You could easily make this vegetarian with vegetable broth in stead.

Oh this sounds good! I looove butternut squash but have always been afraid to make soup. I will have to try this. bookmarking. Smiley
