So it's 2:30 PM, I'm at work and my boy just called to let me know that we'll be having a friend, along with the friend's parents, over tonight for a glass of wine before heading out to dinner. We have to, of course, serve an appetizer or hors d'oeuvre of some sort and I don't know any terrific (veg, of course) recipes that I can whip up in 15 minutes! I do have time to swing by the grocery store but I will seriously only have about 15 minutes to throw it all together. I'm really having a culinary idea blockage so any help or ideas you guys might have would be SO appreciated!

Vegitarian or vegan? I know a few dishes that are super easy but are all cheese based.

Crack dip (it got the name because it's so addicting.):
1 cup mayo
1 cup shredded cheese (I do a cheddar mix) maybe more
1 jar of diced pimentos

Put in a pretty bowl, mix all together, and you can go two ways- put it in the microwave and let it get all melty or serve as is. We do it with crackers and baby carrots.

If you are serving food and wine you can do what we do:
Sharp cheese
arrange pretty.

I am squeezing the Disney magic right now.

Pick up a few tubs of things like white bean salad, sauteed rapini and marinated eggplant at the deli section of the grocery store, toast some baguette rubbed with garlic, add the toppings and garnish with some fresh herbs.  Not very imaginative,  but if you garnish it people will likely be fooled into thinking you made the toppings yourself.   I especially recommend white bean salad (I make a version from scratch to serve on crostini that everybody raves about)

i saw this on TV the other day.

red bell peppers

put bell peppers and butter in the food mixer/processor. you'll get a buttery paste.

thinly cut and toast the baguette.

spread paste over bread and serve.

really good. since it's buttery i'll melt a little.
