Hello everyone! For dinner tonight I decided to throw together a few things that we had around the house so I kind of made it up as I went along. I didn't measure the spices  Tongue so if you decide to make this you wil have to kind of use your own judgement!

Lasagna noodles
16 oz ricotta cheese
1/4 of a 8 oz block of cream cheese
onion powder
oregano leaves
parsley flakes
italian seasoning
shreaded mozzerella
parmesan cheese
can of diced tomatos
panko bread crumbs

I boiled the noodles until they were just about ready.
Next I mixed the spices, ricotta cheese, cream cheese and spinach together.
On the bottom of a sprayed pan, put some of the diced tomatos
Layer with noodles, then the ricotta cheese mixture, the rest of the tomatos and then start layering noodles and cheese mixture.
On the top sprinkle mozzerella cheese and parmesan (since I didn't have any sauce to put on it I sprayed some cooking spray on the top to keep it from burning) and then top with panko.
Put in the oven on 350 until warm

I've made my first vegetarian Lasagna these days. It was great. I put in it tomato sauce and different kinds of cheese - Blue cheese, yellow cheese and white Bulgarian cheese. After I have put all the stuff I splash with a lot of milk and backed it for a half an hour.

Sounds yummy! I would have never thought to add cream cheese to lasagna and I'm sure it gave it a wonderful texture to the cheese.

vegetarian lasagna was one of the first things I made successfully when my husband went vegetarian. We cut out the riccotta cheese though as it is a little too rich for his stomach. We use tofu in place of the riccotta and it still tastes soooooo good!

I use the recipe bellow as a guideline if you ever want to give it a try. I still use shredded cheese on top and add more veggies though.

sounds delicious! i might try this when i am using up odds and ends. perfect place for left over zucchini and such.
