We had Vietnamese chicken soup, which goes by the name of Pho Ga (I think) the other night and I immediately had to make it at home..I heartily recommend it as the most delicious soup on earth. We cheated and used canned chicken broth with a bit of soy sauce and ginger stirred in, but otherwise we followed Emeril's recipe on the Food Network site..http://www.foodnetwork.com/recipes/emeril-lagasse/pho-ga-vietnamese-chicken-noodle-soup-recipe/index.html

Last Night - Lemon Pepper Talipia, pop corn shrimp, hush puppies, mac & cheese (home made), & peas

Tonight I made steaks on the grill they I rubbed in olive oil with garlic garlic (from tastefully simple) and onion onion (also from tastefully simple). I also made roasted potatos with garlic, olive oil, salt and pepper. Then I made a simple pasta salad with Italian Dressing. It was delicious.

stuffed potato skins tonight
baked potatoes, hollowed out, mixed the spud with a little butter and cheese then put it back into the skins, but between the skin and the potato i've put some sliced ham and a dollop of ketchup (i wanted to use sun dried tomato but i don't have any)
i put some grated cheese on top, they're now ready to go under the grill for re-heating/browning

We are having a big Stauffers frozen enchilada casserole which I am not particularly excited about, but it is already defrosted.  I'm also making a veggie quinoa salad for my lunch which we'll also have with supper.
