  1  8 inch graham cracker pie crust

  2 egg yokes
  2 Tbs. Sugar
  Juice from 3 lemons
  1 can sweetened CONDENSED milk  (Eagle Brand is a good one)
   
  Mix together  pour into crust

  refigerate 2 hrs. before serving

Sounds interesting. I might advocate for trying to find pasteurized eggs to really make sure you escape any potential of salmonella, especially if you're going to travel anywhere with this [where it might not be refrigerated the entire time.] I'm not always super cautious [I'll eat raw cookie dough, etc] but it's something to be aware of.

Back before I knew how to cook I ate stuff left on the cold stove overnight, stuff with raw eggs galore, and didn't have any idea food had to be "safe". Never got sick. I probably gained a lot of immunities in those years!

Now that I'm actually educated food scares me.

My family makes that same pie and we just omit the eggs, and top with whipped cream. Yum!

Yup, I agree with Batgirl.  You don't need the eggs at all.

My cousin made it for me with limes instead of lemons when I was in hospital and it really cheered me up!   Grin
