I teach 7th graders (and I'm 27 too!), and I appreciate everything they give me - even if it's a silly drawing that says "I love tacos."  (Yes - I have one that says that posted behind my desk right now.)
Honestly, she will love the gesture and the fact that you remembered it was Teacher Appreciation Day more than anything.

Ah, I love that cell card! It actually inspired me to make my biology teacher friend a cell notebook. Unfortunately I don't have any pictures, but it was quite easy to make, turned out really well, and she absolutely loves it. I just made a felt slipcover for a hardback notebook, blanket stitched around the edge and then used scraps of felt in different colours to assemble an animal cell on the front, blanked stitching aroud the cell itself to create the cell wall.

That biology book is hilarious! I have to take bio this summer and I'm thinking of making one of these for me, it'll be my personal flash card (did I mention I failed this class before? hmm). Wink

Ours was today, and we're celebrating all week, which meant MY brain-freeze was on friday when I was to go decorate classroom doors as a monday-surprise.  They turned out cute, though.  When I get my Mister to empty the camera I'll share. 
If you want her to put it on her desk, I push for the pen-cup.  You can decorate it in a biology theme or apple theme.  Maybe a plant-cell from an apple?  Wink  If you really want to sew something, I'd do a tote, and I'm still kinda stuck on the apple/cell idea.  Cheesy  With a tote, you have room to do one of those blown-up views with the whole apple, then "zoom in" on a portion and make a cell model.
I thoroughly disliked high school biology, and I know it was because of the teacher.  Glad to hear you got better luck. 

Would love to swap, but must admit I'm a little flakey!

I'm a science teacher.  I know it's likely too late but perhaps a simple apron with a cell picture or the names of phylums etc. I have one I bought with the scientific method.  Put pockets on the front so she can wear it while doing labs and still have a place to stash the dry erase markers etc.
