We eat veggie balls/loaf pretty often. I don't have a exact recipe, sorry, but this is how I make them.

beans or peas (about 4-5dl)
chopped onion and garlic
grated carrots or other vegetables
some wheat and potato flour
vegetable oil
(bread grumps)
spices (soy sauce, herbs, cummin, something else)
(sesame seeds or crushed nuts)

Smash the beans and mix all the ingredients and add water if needed. Make balls or whatever you like, it should be easy, if it's not, add some flour. Bake in the 225 Celsius degrees until they look ready. Eat with smashed potatoes or pita bread, for example.

Dunno if you're a fan of tofu, but I can't get enough of the stuff. Smiley

The stores here carry a tofu and sauce combo that's got a nice garlic and chili kick to it.  I just chop that into cubes and stir fry with whatever veggies looked good at the greengrocer's, then serve on brown rice.

I've also recently rediscovered kale, which is similar in taste to cabbage but doesn't get quite as limp and soggy when you cook it.  It's apparently super-good for you, and it's a good source of protein.

I serve it as a side dish sometimes:
chop up 1 small onion and 1 clove garlic, saute in a little olive oil until translucent, stir in 1/4 cup broth, 1 tbsp lemon juice, 1 tsp mustard and 2 cups rough chopped kale. Braise for 6-8 mins, or until soft

Or make a soup:
chop up 1 onion and 2 cloves garlic, saute in a little olive oil until translucent. Add 1 can white beans (not drained) and 3 cups broth, simmer for 4-5 minutes. Puree the mixture, then add 2 cups rough chopped kale and simmer for 10 mins.
