Topic: EASIEST and BEST EVER roast capsicum  (Read 1077 times)

This recipe is so simple I just had to share (I just made a batch!)

* Cut the flesh off the core of your capsicums. If that's a weird description, I mean make sure it's just in 3-4 big pieces, not in strips.
* Stick that under your grill on a really high temperature with a handful of *unpeeled* garlic cloves.
* When the capsicum skins are black and blistering, stack them on top of each other, wrapped in some paper towelling.
* Whilst they're cooling there, peel the garlic and smoosh it into a bowl.
* Pull the skins off the capsicums (much easier whilst they're still hot but be careful) and when you've peeled them all, chop into thick strips and put into your garlicky bowl.
* Drizzle liberally with extra virgin olive oil and balsamic vinegar and mix well.

Great on salad sandwiches, avocado sandiwches, hummous sandwiches....

Sounds yummy! And in case people don't know, it's peppers. Or hot peppers, but I don't know how hot you could go-mmm, banana peppers might be really good!
