i read about these in some book, and i thought they'd make an easy gift for the women in my family.  i just bought some bell jars, some sugar, a few spices and i was set!

from left to right: vanilla sugar (i cut a vanilla bean in half width wise and then length wise), mint sugar (with mint leaves i let dry out in the freezer a little bit), and orange cinnamon sugar (with a cinnamon stick broken a few times and a few slices of dried orange peel).

basically, you layer the sugar and the spices and seal it tightly, stirring every few days to mix up the flavored sugar with the unflavored, getting all sugar next to the spices at some point.  it's better to keep it sitting a few weeks while setting so the flavor is fuller before you give it away.  the flavored sugar is great for coffee, tea, and baking.

ps the vanilla sugar can also be used in place of vanilla if you run out while cooking Smiley

My favorite sugar flavors are, believe it or not, lavender and rose.  Frontier sells organic (and edible) lavender and rose buds that work wonderfully for this.
