I keep a bowl of these pickled cucumbers in my fridge all summer.  They are super yummy and can be made as spicy (or not) as you like.

There are just a few ingredients: cucumbers, garlic, salt, sugar, red pepper flakes, rice vinegar and sesame oil.

Start by peeling your cucumbers then cut them in half and remove the seeds.  From there, just slice them up.

The sliced cucumbers get tossed with a Tbsp of kosher salt in a colander and set aside at room temperature for 3-4 hours.  This allows a lot of the liquid to be be drawn out of the cukes.  This liquid gets discarded.

Put the cucumbers in your serving bowl and add fresh sliced garlic and hot pepper flakes to taste.  I used a head of sliced garlic and a large pinch of hot pepper flakes.  Sprinkle 1/3 cup of sugar on top then pour over 1/2 cup of rice vinegar heated to boiling followed by 1/3 cup of sesame oil heated through.  Stir, cover and refrigerate for at least 3 hours before serving.
