This is more of an idea than a recipe...

We traditionally have a roast dinner on Sundays in England, and usually have leftovers. One of my favorite things to do with the leftovers is to make a frittata. On Tuesday I have a daddy day with my toddler and I made this for our lunch.

I got a large frying pan and got it hot with some olive oil, then threw in some leftover diced chicken and roast potatoes. We didn't have any veg left so I added half a can of sweetcorn. Then I just whisked 3 eggs with a splash of milk, some seasoning and a sprinkle of dried herbs. I added this to the pan, and after a minute put it under the grill to cook the top. I put a plate over then pan and flipped it over to serve the crispy side on top.

We had some leftover salad with ranch dressing on the side, and I can't resist ketchup because I'm a heathen.

You can do the same thing with leftover beef or pork! My two year old loved it too Smiley
