So I've been hearing about the awesomeness of Spam musabi from all my friends who have been lucky to vacation in Hawaii.  Since I haven't been able to visit this happy place myself yet, I thought I would give it a try and warm up my cold winter.  Upon researching Spam musabi recipes on the internets, I saw so many cute Totoro incarnations which totally was something I had to do- I mean this could only make eating spam all the more awesome right?

Here's what you need:

Cooked sushi rice (Stir together 2 TBSP rice vinegar/2 TBSP sugar/couple pinches of salt and heat in the microwave for 45 seconds till sugar is dissolved; stir into 2 cups cooked and slightly cooled sticky rice), furikaki rice seasoning (a mix of seaweed bits, sesame seeds and bonito-some kind of stinky fish smelling stuff) and toasted nori sheets.  and for the totoro bits I used mozzerella although any white cheese or egg white omelette would work as well.

After a ten minute struggle to get the Spam out of the can in one big block, slice it into 8-10 lengthwise slices depending on how much Spammy goodness you feel you can stand.  Fry the slices in a non stick pan and brown them up on each side-the beauty of Spam is that it comes with its own fat so no need to add any and no worries about stickage.  You may need to leave the room or breathe through your mouth during this part of the process, eau du spam frying is an acquired taste I think.
Once my slices were browned, I mixed up a sauce and added it to the pan
1/4 cup soy sauce
1/4 cup oyster sauce
1/2 cup sugar
I think I would skip the oyster sauce if I ever made this again, or maybe not cook it as long as I did (15 minutes) because it kind of carmelized my slices.  Candied Spam was not necessarily what I was going for...but honestly only enhanced that spectacular pink goodness

Meanwhile, mise en place your Totoro bits so you'll be all ready to assemble.  I used the natural shape of my mozza ball slices cut in half for the belly and a short piece of bubble tea straw to cut out the eyeballs.  I cut thin strips of nori into triangle shapes for the belly, punched out some tiny pupils and made little oval noses.  The not pointy end of a toothpick dampened with water was a great precision tool for placing various body parts.

Since I don't own a musabi rice press I had to Mcguyver a solution-handy Spam can to the rescue!  I lined my trusty can with plastic wrap, put about 4 big tablespoon scoops of rice in (loose packed looked almost to be half a can) then squished it down firmly with my birdie rice squisher-worked perfectly in the rounded corners!  Jimmy your rice out carefully by pulling up both ends of the plastic wrap.  I made all the rice patties at once.

For the Totoro musabi, place your bits. It would be handy to wrap a thin strap of Nori like a belt under the belly to hold it all together.
For regular spam musabi, wrap your Spam pkg in a cut to size nori sheet.  I made a few regular musabi for the non cute food lovers in my home.  Who knew there were people like that?
