I took one pic of something I sent before I shipped it. I made a felt mascot! I used a cocktail umbrella after I painted it and snipped down the wood!

Not the best pic...The tofu was done in the crock pot. Easy recipe: 2 bottles of BBQ sauce with 2 tubs of tofu - drained, pressed and cubed. Cook on low for 5 hours! The mac n cheeze has broccoli and can be found here:http://letsgetsconed.blogspot.com/2007/03/new-farm-mac-and-cheez.html.

I made these for my bday! The recipe is something I came up with after finding a few non-vegan versions...They are very dense and sweet!

Super Walnut Coffee Cupcakes + Coffee Butter Cream Frosting
[makes 12 standard sized cupcakes]

3/4 cup Earth Balance (room temp)
3/4 sugar
3 tbsp. of Egg Replacer with 9 generous tbsp water - mixed
1 1/4 cups ap flour
tsp. baking powder
cup walnut pieces
1 packet* of Via Instant coffee -Italian Roast- dissolved in 1 tbsp. of hot water

Preheat oven to 350F. Line a 12-cup muffin pan with liners.

Beat the Earth Balance and sugar together until creamy and then slowly add the Egg Replacer mixture. Sift in the flour and baking powder and then mix in. Fold in the walnuts (checking for big chunks, discard those). Divide the mixture between the cupcake liners evenly. Bake for 20-22 minutes until a toothpick comes out clean.

[Coffee Butter Cream Frosting]
2 tbsp. of plain soy milk
1* packet of Via Instant coffee -Italian Roast-
6 tbsp. of Earth Balance
1 1/4 cups of sifted powdered sugar
large walnut halves to decorate

Warm the soy milk in a pan (do not boil) add coffee and stir until dissolved. Let cool in a medium sized bowl till warm - not hot. Beat in the Earth Balance and frosting till creamy. Frost each cupcake and decorate with a walnut half.

*About 2 teaspoons

I got my package from sunshinesmiles on Friday and it was truly a early bday present for me (My bday is tomorrow). I was really spoiled!

First up hand stitched leopard cupcake dish towels, a box of treats for my kitty Mar (who does not want to be outside in photos because it is sooooo hot), Wilton cake color gel -red (which is vegan and I use a lot for 'bloody' effects and red velvet cupcakes), 2 cupcake bowls, rubber spatulas, a yummy smelling candle and the cutest most sweetest cupcake panda - and can you believe she is new to hand sewing?!

A leopard bow mixing bowl, a cupcake printed journal, cupcake-cute art, cupcake cards and cute cupcake stickers:

And if that was not enough cupcake etched glasses and Mar magnets!

Thank you so much again sunshinesmiles. You totally made my day! I love it all so much. I hope my packages make it over your way shortly!

The PMS- monster is in town & I feel gloomy but today I was rather happy when I got my package from mamaphunk!

First off this quilted banner really warmed my heart, I am trying to open a vegan bakery, it is my dream, something I work on every day. MP said it is for my bakery but till I have a store front I plan on using it for the bake sales I host. I love the heart bubble gum looking fabric.  Also in this shot is a sweet lil locket necklace:

She made me a market bag sling out of a vintage pillowcase, really nice and will come in handy. I was not about to get in the photo today - PMS bloat!

These are like one of my best sellers. I made them for the vegan bake sale I organized last weekend and they sold out in a hour. I usually bring them to pot lucks...I made more for the boyfriend's lunchbox!
