It looks to me like your starting chain was probably just too tight.  It's a problem that I have pretty much all the time, where my starting chain is considerably tighter than the rest of my stitches.  I've found it helps to go up a hook size (or sometimes 2!) for the starting chain.

I have to say, my husband doesn't normally like homemade mac 'n' cheese because he says it all tastes floury to him, so I was really excited to try your roux-free recipe.  He loved it.  I doubled the recipe, and he still ate almost half of it.  I am ecstatic to finally have a homemade mac recipe that he likes!  Thank you!

Regular Red Heart or Simply Soft should both work just fine for that pattern, they are both worsted weight, which is what the pattern calls for.

I've got a cubby with different fabric boxes in it that hold things like my yarn, my embroidery stuff, markers, craft books, etc.  Then I've got some giant plastic bins that sit on the side of my craft table that hold all my fabric and painting supplies.

I'd say find a crochet glove pattern that you like the look of, then just leave off the thumb and pointer finger (or maybe do the base part of the thumb and pointer finger, depending on how the pattern is written).

Don't count the slip stitch as a stitch, and don't make a new stitch into it.  I've found it's a bit easier to ignore the slip stitch if I tug the yarn after I make it so that it gets really really small and utterly impossible to work into anyway.
