I don't know about you, but I LOVE sugar cookies. This is the recipe I use for Christmas, Valentines day, St. Patricks Day, and Easter. I buy a can of white frosting, add peppermint extract, and whatever colors you want, and voila! Delicious cookies to share with everyone!

"Best Ever" sugar cookies
2 eggs
1 1/2 cups powdered sugar
2 cups butter, margarine, or butter flavored crisco
1/2 cup sugar
3 teaspoons vanilla
cream together well
4 cups flour
2 tsp soda
2 tsp cream of tartar
1/2 tsp salt
sift together and add sifted mixture to creamed mixture. Mixture will be soft. Chill at least 2 hours. Roll out dough onto lightly floured surface to about 1/4 thick, and cut with cookie cutters. Sprinkle with sugar if you don't want to frost them. Bake at 350 for 10-12 mins. (This is my great grandmas recipe)

oh, and let me add that it's crushed pineapple, so you don't notice it that much if you hate it.

Here is my Grandmas recipe. She made it a lot, and even had it served at their 50th anniversary party.

Carrot Cake
3 eggs
1 1/4 c wesson oil
2 c sugar
2 1/2 c flour
1 tsp cinnamon'
1 tsp nutmeg
2 tsp soda
2 tsp vanilla
1 tsp salt
1 - 7 oz pkg angel flake coconut
2 c shredded carrots
1 c chopped walnuts
1 - 16 oz can crushed pineapple

Mix all ingredients. Place in a greased and floured 9 x 13 pan. Bake 1 hour at 350 degrees.

Frosting
1- 3 oz pkg cream cheese
1/2 box powdered sugar
1/2 cube butter or margarine
1/2 tsp vanilla
Mix all together until light and creamy. Add nuts if desired.
