Project Name: Dark Chocolate Coconut Bars
Project Link: n/a
Brief Description: I made these as a snack for all of my coworkers and family. Here is the recipe!:

-3 small bags of sweetened shredded coconut (about 2 1/2 cups of coconut each)
-5 oz sweetened condensed milk
-A large bag of dark chocolate morsels
-box of graham crackers

Mix the coconut and condensed milk until it's a thick paste. Mush it down flat in a cookie tray to make a thick flat layer.
Bake on 350 until it starts to get brown and crispy looking on the top (not too much! 15min should do it)
TURN OFF HEAT and pour chocolate morsels evenly over coconut and leave in the oven to melt.
Spread melted chocolate into an even layer, top with whole graham crackers like you're paving a delicious walkway. CHILL IN FRIDGE until chocolate is cold and solid. Cut and snack!

Medal Event: Foodology
Bonus Points: Brain Power and Engineering
Project Name: Garden pumpkin puree and seeds
Project Link: n/a
Brief Description: I have never made pumpkin puree.. I've been growing these pumpkins all year and the heat killed the vine so I brought them inside! Since it's too early for Jack-O-Lanterns, I tried my hand at making my own puree! (and roasted pumpkin seeds) It turned out pretty good. Here's how I did it!:

Preheat oven to 325
Stab your pumpkin violently (to provide steam vents while roasting)
Place pumpkin in a dish or something to keep it from falling over
Bake for an hour or until tender (it will be easy to push a fork into)
When it's done, take out the seeds and set aside for roasting (or throw them out)
Peel off skin and put the meat in to a blender to puree!

Note: Roasting time might differ depending on the size of the pumpkin. Mine made about 2 1/2 cups of puree each.
