1  Pokemon ready to battle birthday cake! in Dessert by GladyMakes on: November 02, 2014 08:05:29 PM
So, I was asked to make this super fun birthday cake recently and I just wanted to share with you all  Smiley

I have to admit, I know very little about Pokemon. The only character I was familiar with was Pikachu. Luckily, this 7 year old boy knew exactly which characters he wanted on the cake. I gotta say, researching Pikachu, Charizard and Blastoise was a sweet gig  Cheesy

The cake flavour is mango with mango swiss meringue buttercream and of course, chopped up mango between the layers of cake. All of the characters/decorations were made with a mix of fondant and gumpaste made a 3 days prior so they had enough time to dry and harden.

Made these babies for a kids Halloween party last weekend. Fun to make and I was told they were a hit!  Smiley

To make:

I tripled the classic Rice Krispy treat recipe, added orange food colouring to the melted butter and marshmallow, rolled into balls (about a 1/2 Cup in amount). This made 36 pumpkins. I used black frosting to pipe the eyes and mouth. Voila!

Just wanted to share the latest cake I made for a wild west-themed 1st birthday cake. I love fun themes and this was fun to make. The cowboy hat, wanted poster and sheriff badge are made out of modelling chocolate. I LOVE that stuff! Such a dream to work with.

The flavour was a custom combo: chocolate cake, Oreo swiss meringue buttercream and caramel drizzle. I'm so glad there were scraps because it was pretty yummy  Grin

We had leftover pie from (Canadian) Thanksgiving and instead of having it sit in the fridge (and possibly go to waste!) I decided to whip it up with ice cream and voila! Pie & cheesecake ice cream  Grin

Step 1: Put ice cream in a bowl
Step 2: Add in crumbled up pie-crust and all and blend!

Step 3: You're done. Now eat!

(vanilla pecan pie, vanilla apple pie and chocolate cherry cheesecake)

5  My Mexican Lasagna in CHALLENGE 103 ENTRIES by GladyMakes on: October 11, 2014 08:50:35 PM
My first Craftster Challenge entry-woohoo!  Smiley

I saw a recipe for a Mexican "pie" years and years ago and decided to make something similar but, y'know, bigger and (hopefully) tastier! I've been making my Mexican Lasagna since 2001 and people ask for the recipe every time I bring it to a party. I hope you enjoy it!

My Mexican Lasagna - Gladymakes

Ingredients (I usually cook with "a dash of this" or "a pinch of that", but I have quantified the measurements as closely as I could Grin)
**1 large oval aluminum roasting pan
1 x package of 10 tortillas
1 x 1 1/2 - 2lbs ground beef
2 x big jars salsa (I like the chunky kind)
1 x big block (or bag) of cheese (500g - I like Monterey Jack and cheddar)
1 x small onion chopped
1-2 x cloves of garlic minced
1 x tub of sour cream
1 x tub of guacamole (optional - you could also make your own)
1 x packet taco seasoning
1-2 tsp. cajun seasoning
1 x bag of tortilla chips
salt and pepper to taste

(ingredient round-up, onions/garlic/seasonings, beef, salsa)

**If using blocks of cheese, shred this before you start on the beef/salsa sauce
1. Preheat oven to 400 Fahrenheit
2. On medium heat, in a big pan, saute the onion for a couple of minutes. Then add the garlic. Saute for 1 minute.
3. Add the cajun seasoning, salt and pepper. Saute for another minute.
4. Add the beef and taco seasoning. Crumble the beef up, stir and cook until the beef is no longer pink.
5. Add the salsa to the beef mixture and stir to combine.
6. Let simmer, stirring occasionally, until the mixture comes to a boil then take off heat.

(saucy bottom-hehe, tortilla/beef salsa layer, sour cream/cheese layer, top layer)

7. Get your pan and ladle a little of the sauce into the bottom of the pan. (You just need enough that the first layer of tortillas has something to stick to.)
8. Place first layer of two tortillas side by side in pan. Add enough sauce to cover.
9. Place second layer of tortillas in pan on top of sauce layer. Add some of the sour cream, guacamole, cheese, and crumbled chips.
10. Repeat layers.
11. You should end with the sauce/beef layer. To this layer add a few dollops of the sour cream and guacamole. Sprinkle the remaining cheese and crumble more chips on top.
12. Cover the lasagna with foil and put into the oven for 20min. Take foil off and leave in the oven for another 10min or until the chips are nice and golden.
13. Let cool and then eat and enjoy!

6  My Sprinkles Strawberry Cake w/ Nutella Creamcheese Frosting! in Dessert by GladyMakes on: September 24, 2014 05:57:35 PM
This was my first attempt at a sprinkles cake as well as a strawberry cake and I think it turned out pretty well! I made this for a family gathering and it was gone in a flash!  Cheesy

The cake itself was moist, fluffy with a good crumb and great strawberry flavour.

The Nutella Creamcheese frosting (I made on the spot):


3 8oz packages of creamcheese
1 Cup Nutella
2 tsp vanilla
Confectioners sugar to taste and consistency (I used about 1/2 Cup as Nutella is sweet enough and I didn't want my frosting too soft or runny)


Add creamcheese, Nutella and Vanilla in a bowl and mix on medium high for 5 minutes or until well blended.
Gradually add confectioners sugar.
Try not to eat all of it before frosting your cake.
