Pumpkin Squares With Cream Cheese Frosting

Recipe adapted from my friend Pams mom (Jeanette)


For the pumpkin squares you will need:

4 eggs

1 and 2/3 c. sugar

1 c. canola oil

One 15 oz. can pumpkin puree

2 c. all-purpose flour

2 t. baking powder

2 t. cinnamon

1 t. salt

1 t. baking soda

1. Preheat oven to 350 degrees.  Spray 2 large (I used two 1117″ pans) or 1 half sheet pan with cooking spray.  Set aside.

2. In a large bowl (or the bowl of an electric mixer with the paddle attachment), mix together the eggs, sugar, oil, and pumpkin until well combined and smooth.

3. Add in flour, baking powder, cinnamon, baking soda, and salt.  Mix until well combined.

4. Bake for 20 t0 25 minutes, or until a knife inserted in the center of the cake comes out clean.


To make the frosting, you will need:

1 c. (2 sticks) unsalted butter, softened

One 8 oz. package of cream cheese, softened

3 c. powdered sugar

1 t. vanilla

1. In large bowl (or the bowl of a standing mixer with the whisk attachment), cream together the butter and cream cheese until light and fluffy.

2. Scrape down the bowl, then while mixer is on low speed, mix in the powdered sugar, 1 cup at a time.

3. Add in vanilla.

4. Frost cooled pumpkin bars with cream cheese frosting.  Slice into bars.


Bars will keep, well wrapped in the refrigerator, for up to 4 days.

Snickerdoodle Bars

Recipe adapted from Dozen Flours

You will need:

2 and 2/3 c. all-purpose flour

2 t. baking powder

1 t. salt

2 c. packed light brown sugar

1 c. (2 sticks) butter, softened

2 eggs

2 t. vanilla

2 T. sugar

2 t. cinnamon


1. Preheat oven to 350 degrees.  Line a 913″ pan with foil and spray with non-stick spray.

2. Sift together flour, baking powder, and salt.  Set aside.

3. In large bowl of a mixer, cream butter and brown sugar together until light and fluffy.  Add eggs and vanilla and blend until smooth.

4. Slowly add flour mixture into wet mixture and mix until just combined.  Fold batter with a spatula to ensure flour is well incorporated.  Pour into prepared pan.

5. Combine sugar and cinnamon in a bowl.  Sprinkle evenly on top of  batter.

6. Bake 20-30 minutes, or until surface springs back when gently pressed.  Cool and slice into bars.  Store in an airtight container.

Triple Chocolate Banana Bread

Recipe adapted from BunsInMyOven.com

Makes four mini loaves or one 9″ loaf.

You will need:

1 and 2/3 c. all-purpose flour
1/4 c. cocoa powder
1 t. baking soda
1/4 t. cinnamon
1/2 t. salt
1 c. sugar
2 eggs
1/2 c. oil
2 T. chocolate spread (I used Nutella)
3 bananas, very ripe, mashed
2 T. sour cream
1 t. vanilla
2/3 c. walnuts, toasted and chopped (to toast, place walnuts on a baking sheet, lined with parchment paper or foil and bake at 350 for about 8 minutes theyre done when you start to smell them)
1/2 c. milk chocolate chips

1. Preheat oven to 350 degrees.  Spray a loaf pan(s) with cooking spray.

2. Stir together flour, cocoa powder, baking soda, cinnamon, and salt in a large bowl.  Set aside.

3. In the bowl of your stand mixer, beat together the sugar and eggs until light and fluffy.  Drizzle in the oil, then add the chocolate spread.  Beat in the mashed bananas, sour cream, and vanilla.

4.  Fold in the dry ingredients, then the nuts and chocolate chips.

5. Pour into loaf pan and bake 45 minutes to an hour (if youre using mini loaf pans, check on these at 30 minutes mine took about 40 minutes).

The Best Homemade Brownies

Recipe adapted from Buns In My Oven

You will need:

1 cup (2 sticks) butter

2 and 1/4 c. sugar

4 large eggs

1 and 1/4 c. cocoa powder

1 t. salt

1 t. baking powder

1 T. vanilla

1 and 1/2 c. all-purpose flour

2 T. chocolate spread (I use Nutella)

2 c. chocolate chips


1. Preheat the oven to 350 degrees.  Line a 913″ baking dish with foil and grease (I usually use cooking spray, but butter or margarine works just as well)

2. In a small saucepan over low heat, melt butter completely.  Stir in sugar and continue cooking 1-2 minutes, stirring constantly do not allow sugar mixture to boil.

3. Pour butter mixture into a large bowl or stand mixer, beat in cocoa powder, eggs, salt, baking powder, and vanilla extract. Mix until well combined.

4. Stir in the flour, chocolate spread, and chocolate chips until well combined.

5. Spread into prepared pan (batter will be very thick and sticky) and bake for about 30 minutes, until a tester comes out mostly clean. The edges should be set and the center should still look slightly moist, but not uncooked.  Cool completely.  Slice into bars and store in an airtight container.

The Perfect Chocolate Chip Cookie

Recipe adapted from Dandee

You will need:

1 & 1/3 c. unsalted butter
1 c. sugar
1 c. brown sugar
2 eggs
2 t. vanilla
3 c. & 6 T. all-purpose flour
1 t. baking soda
1 t. salt
2 c. chocolate chips

1) Cream butter and sugars

2) Add eggs and vanilla

3) Mix well

4) Add flour, soda, and salt

5) Fold in chips

6) Bake at 350 degrees F for 12 minutes

It's summer.  S'mores are perfect summer food.  Bake them into bars and share them with your friends!  *high five*

You will need:

2 cups all-purpose flour
2 cups graham cracker crumbs (I put about 2 stacks of grahams into the food processor and pulsed them a few times)
1 teaspoon baking powder
1/4 teaspoon salt
2 sticks unsalted butter, softened
1 and 1/2 cups light brown sugar, packed
2 eggs, beaten
15-20 marshmallows, halved lengthwise
3 chocolate bars, broken into pieces

1. Preheat oven to 350.  Line a 913″ baking dish with foil and mist with cooking spray.

2. In a bowl, combine graham cracker crumbs, flour, baking powder, and salt.  Mix well.

3.  In the large bowl of an electric mixer, cream the butter and sugar until light and fluffy on medium speed (about two minutes).  Beat in eggs until well combined.

4.  Reduce speed to low and slowly add in flour/graham cracker mixture.

5.  Press half of dough into pan, until dough is uniform and flat.  Place marshmallows and chocolate pieces on top of dough.  Crumble remaining dough on top of chocolate and marshmallows dont worry about covering the top marshmallows and chocolate should peek through.

6.  Bake until golden brown, about 30-35 minutes.  Cool completely and then slice into bars.
