1  COOKING / Vegetarian / Vegan / 'Italian' Vegetable Stew with Brown Rice on: April 12, 2010 08:02:08 PM
Last night I was going to make vegetable curry, but I really didn't feel like curry so when I found some tomato paste in the fridge I decided to make an 'Italian' vegetable stew.  I added sweet potato, potato, carrot, red lentils, spinach, tomato, mixed beans, chicken stock, dried herbs (basil, oregano, rosemary and parsley), garlic and tomato paste.  All slow cooked for two hours.

And for the rice I used brown rice and added some barley, split peas and yellow lentils for variety and extra protein. It turned out really well and my boyfriend, who said he wasn't hungry, chowed down a massive bowl of it.  I think it might be a keeper.

Sausage sizzles are pretty Aussie.  Just bbq some sausages and sliced onion and serve on a slice of bread with tomato sauce.

Damper is really easy to make and is best served warm with butter or golden syrup (or both).  http://www.taste.com.au/recipes/6793/plain+damper

Sausage rolls and party pies served with tomato sauce.

Vanilla slice with passionfruit icing.

And I'm not sure if it's an Australian thing, but every party I went to as a kid had cubes of cheese, frankfurt and pickled onion skewered on toothpicks.

Mashed vegetables were the staple of my post-dental surgery diet.  I grew quite fond of mashed potato, mushy peas and gravy, but you can pretty much mash any vegetable and add a bit of sauce for flavour.  Any kind of soup is also pretty good.  I also had a lot of yoghurt, rice pudding (I wish I had known about tapioca pudding back then too, because it would have been great), custard, smoothies with added protein powder, dahl with rice and mac cheese (I overcooked the pasta slightly so that it was nice and mushy).

I also found it easier to eat smaller amounts of various foods throughout the day rather than larger amounts at meal times.  I had a lot of trouble chewing (and some trouble swallowing at first) and spreading it out helped me to feel full for longer and made eating less frustrating.

I used to mix my baked beans in with some broccoli and mashed potato and then have it on toast with cheese melted over the top.  That was pretty tasty.  I also sometimes use baked beans as a nacho topping and I've heard that baked bean pies are pretty awesome too.
