Brief Description: I have a dream to lose weight before my sons wedding in November. So I dont have much time!!! I decided to try eating Keto and see how that works for me.... so far Im a week in and 5 pounds down!! Not too bad!

So for dinner last night I threw together this frittata. Easy and Keto- friendly, although I used way more butter than I needed to. I reduced the amount to a more reasonable amount in my recipe below. I used a cast iron pan because this dish goes from stovetop to oven.

Melt about 1/4 c of butter (or you could use olive oil) in your pan over medium high heat. If you use a cast iron pan like I did, make sure the sides of the pan get butter or oil on them as well. Add 8 oz of sliced mushrooms and 2 stalks of green onions, sliced. Saut them until the mushrooms are slightly browned and it smells yummy. Add 2 medium fresh diced tomatoes and about 1/2 cup either fresh or frozen spinach and saut for just a couple minutes. Add some seasonings. I just used salt & pepper. Then pour into the pan a dozen eggs which have been lightly beaten and also seasoned. Dont mix anything after this point. The egg just rests on top of all of the other ingredients. Continue cooking for a few more minutes until you can see that the egg has begun to cook along the sides. Sprinkle about half a cup of shredded cheese on top. Place the pan in a 400 degree oven and bake until the egg in the center doesnt jiggle anymore, about 10 minutes or so. Then slice it up in wedges and chow down!
