1  COOKING / Recipes and Cooking Tips / Need ideas for a really weird diet. Please read because I need help desperately on: May 10, 2017 06:15:55 AM
My family is filled with lots of dietary issues, and I am going quietly insane trying to come up with ideas that are in compliance with all of the issues, without breaking the bank or my mind.   

Here are the criteria I am working with: 
1) diabetes- my teenage daughter and husband
2) egg allergy- myself
and the biggest one:
3) a very specific diet for my 11 year old son:  2070 minimum calories a day (max of 2330) to be broken up among 4-6 meals as follows:
                           a) 12-15 grams of fiber per day, broken up among the 4-6 meals
                           b) between 50-55 grams of fat per day
                           c) 38 grams of protein per day
                           d) fruits and vegetables must be skinless, seedless, non-fibrous, and cooked to soft or pureed.
                           e) the only grains allowed are white flour and white rice as well as a small amount of pasta.
                           f) no beans/legumes
                           g) the only nuts allowed are nut butters, which can not include hazelnut
                           h) also, he has a shellfish allergy.

This diet goes against everything I have EVER been taught about nutrition. 

We are "too rich" for food stamps, but we have a rough budget of $125 every two weeks for groceries, with a massive stock up done every couple of months.    In other words, we are working poor, and can't have crazy expensive ingredients.

I make my own stocks and things like that, so I know how to make things stretch. 

I desperately need ideas for meals, because it has reached the point that we eat "baked chicken with white rice" two to three times a week, and mix it up with "red sauce with insert shape of pasta here".

That is amazing.  Both from the beauty and skill you put into it, and...I have PTSD, and I must say that your description of what you deal with anxiety-wise is one of the most accurate and eloquent and...perfect...descriptions of what it (anxiety) is like.

Oh my gosh!  Thank you for the birthday greetings.  I haven't been on here for a few days.  I've been hip deep in the craft room mess.  I will say I have successfully gotten half a floor, and some of the shelves. 

Happy belated birthday Lana and Bethntim!  I am sorry I didn't come back on and wish you guys happy birthday in a more timely manner.  Tongue 

I did a quick glance at things, and saw an awesome alien jacket and some great crochet and...was that a scrump made out of felt?!?  Oh...scrump is my favorite.

Good morning all.   

I haven't done much in the way of "crafting", but I have been tearing apart and reorganizing the craft room, so I figure that counts for something. 

I've been having a rough couple of days, mood wise.  It's my birthday tomorrow, and that's always a hard time for me to deal with.  For the record?  *whispers*  Ptsd stinks.   

Aaannyways...enough pouting, and on to the crafting I HAVE been working on.
I have been loving the loom knitting thing, now that I have finally figured it out. 
I successfully made a scarf, but it was too short, so I got some more yarn in coordinating colors, took it apart and started over.    I accidentally pulled the yarn knot too tight, and broke it, so I tore it apart, and am starting again this week.   I finished the coordinating hat, and will post photos later today, or tomorrow. 

We're in the middle of a tropical storm, and that means that internet is occasionally wonky.  And yes, I am totally thrilled to have a tropical storm as a birthday present.  The least they could have done is named it after ME.  Sheesh.  Those meteorologists.  Tongue 

I am working on a larger loom knit thing.  Depending on how big it turns out, it's going to be a purse/grocery store bag.  It's a gift for one of my housemates, so it will be harder to post.

Let's see... I have learned (sort of) how to crochet a bit.  A friend sat down and taught me how to attach the strings together.  So I sort of made a square.  Small detail she neglected to mention in her tutoring?  You have to count stitches, or you wind up with weirdly triangular shaped "squares".  Needless to say, that got torn apart, and will be re-done, soon.  But it is the first step to making my own cute little people.  I can't wait!

They haven't done it since then, and I keep looking.  I guarantee I will buy more if they do it again. 
When they did it, I got 5 bags.  Two got donated to the local knitting group, because they make scarves and hats for charity.  One got donated to my son't school for art class. 

But, I totally admit that I kept the softest and coolest ones for myself.  *smiles guiltily*

What's the name of the yarn brand and of the colorway, if I may ask?  Cheesy

I once saw a yarn similar to that by Red Heart.  Every time I saw it, though, I'd be like "ewwww".  Then, lo and behold, I had to make something with it someday and the colorways were indeed beautiful.  Smiley

The extent of my knowledge of yarn is...*blinks stupidly*  It's yarn.   Huh

My local Michael's had trash bag sized "grab bags" of yarn for $5 about two years ago, and I bought a couple of them in order to eventually learn to use yarn. 

Also, what's a "colorway"?  I truly am clueless about these things.  Tongue

I made a scarf out of this really cool yarn.  I thought at first it was just white and blue with a little bit of brown.  But...this is the weirdest yarn ball I have ever worked with.  Of course, since it's the first yarn ball I have really worked with, I guess that isn't saying much. 

But, really.  It's got brown and tan and blue and green and white and...sections that are one inch white and one inch black??? 

There is no rhyme or reason to this yarn, and I completely LOVE it. 

That baby hat I made last week?  I think it's going to be taken apart and become a bigger hat with what is left in order to match this awesome scarf.
