This is definitely my next bake. I am on a mission to find as many nice apple reciepes as possible to use up the apples from the apple trees my mum has. Thanks for posting.

I made it again the other day and changed the order of adding the ingredients and it turned out dry. the trick is definitely to add the oil last and bit by bit. Your icing sounds like a good idea.

So far it has lasted for two months absolutely fine - that's if you don't use it all up before then.

Just baked these and they are super yummy.

175 g cooked peeled beetroot
200g plain flour
100g cocoa powder
1 tbsp baking powder
200g golden caster sugar
3 eggs
200ml sunflower oil
100g dark chocolate chips or chopped chocolate

Makes 18 muffins

Preheat the oven to 190C
Line 18 muffins cases
Grate the beetroot
Add all the ingredients and mix together
Slowly add the oil
Fill the muffin cases until they are two thirds full (I overfilled mine slightly)
Cook for 25 mins or until a skewer comes out clean
Leave to cool

A friend of mine taught me to needle felt a little while ago. My sister really likes fruits with faces so I made this for her.

Peach or cherry sound good. I think you would just add more salt for a more watery fruit. Let me know if you try peach or cherry and the next time I have some leftover different fruit I will also try something else and report back.
