A picture of everything together (minus the small boxes of Lucky Charms that I substituted for packing material).  A bumbleberry jam scented candle, a set of six drink markers, a keychain, strawberry on white & grape on wheat necklaces, toast stuffie with smaller matching cat toy (hiding underneath) and some Alaska Salmonberry jam, Fireweed honey, a silicone butter & jam set and a mini cinnamon toast candle

First batch of the year!  The berries are coming in plentiful around here and I can hardly keep up them, tho' I'm making a really good effort.  I've been making jam about twice a week now for the past three weeks, yeilding 8-9 pints each batch.  Needless to say, I've been handing it out to everybody Wink

Bumbleberry Jam

6 c. mashed mixed berries (I used strawberries, raspberries, marion berries and blueberries)
4 c. sugar
1/2 c. lemon juice
1 package no-sugar added pectin

After measuring your sugar, mix 1/3 c. of it and mix with the pectin in a small bowl.

Sterilize your jars in a large pot of almost boiling water for about 10 minutes and keep in hot water until use.

In another large pot, mix the berries, lemon juice and pectin/sugar mix and bring to a full boil over medium/medium-high heat.

Add lids and rings to hot water bath with jars.

Add the remaining sugar to the boiling strawberry mixture and bring it back to a hard boil for 1 minute (a slow gradual heat to boiling cuts down on foam, so patience is really a virtue here).  Remove from heat.  

Skim any excess foam.  Let stand for 5 minutes and stir completely.

Fill jars to within 1/4 in. of the top.  Place on lids and rings.  Place jars in water bath, with the water level completely covering the tops of the jars and boil for ten minutes.

Remove from water bath (I use regular barbeque tongs for this part -- I always forget about canning tongs) and let cool overnight.  

Crack open for breakfast and enjoy the berry goodness all day long!!!  Absolutely delish Grin

4  Cooking Challenge - Celebrating July 4th!- Caramel Apple Cupcakes in Dessert by ReLovely on: July 10, 2010 04:39:55 PM
Allrightythen......you're all invited to my place for a potluck Grin  Everything looks fantastic!!  

I also went with cupcakes.  Caramel Apple Cupcakes.  I saw this in the Taste of Home Fun Food magazine and had to try them out for the holiday -- they were a big hit and just plain ol' fun!!  The recipe in the magazine called for a box mix but I went ahead and substituted a spice cake recipe instead.

Caramel Apple Cupcakes
2 1/2 c. flour
1/4 c. cornstarch
4 teas. baking powder
1/2 teas. salt
1 teas. cinnamon
2 teas. ground ginger
1/2 teas. nutmeg
1/2 teas, ground cloves
1/2 teas. allspice
1 c. milk
3 large eggs
2 teas. vanilla extract
1 c. unsalted butter, softened
2 c. dark brown sugar
2 c. chopped peeled tart apples
Preheat oven to 350.  Line muffin tins with papers.  Mix dry ingredients in large bowl.  Mix milk, eggs and vanilla extract in smaller bowl.
Beat butter into dry ingredients, until mixture forms pea-sized pieces.  Add 1/2 of the milk mixture and beat until smooth.  Add remaining half of milk mixture and beat until smooth.  Add sugar, mix well.  Add apples, beat until incorporated.  
Pour batter into cupcake papers.  Bake for 20 minutes/toothpick test.  Cool for 10 minutes before removing from pans to wire racks to cool completely.
Caramel topping
Melt 20 caramel candies with 3 tbls. milk over low heat until smooth.  Spread over cupcakes.  Sprinkle with nuts of your choice, pictured with walnuts here.  Insert a wooden stick into the center of each cupcake.  Yumm-m-my!

5  gorgon pin in Polymer Clay: Completed Projects by ReLovely on: June 30, 2010 07:57:36 PM
So this is a post of many firsts...first project post, first polymer clay project, first challenge Wink

I saw this challenge and decided that I must break into the polymer clay that I had waiting around for inspiration....

and so....a gorgon pin (just ask me about my hair sometime Grin)

I used a wire reinforcement in the snakes, added some paint and glossed it up.  I'm really liking how it turned out and even better, I remembered how much I liked playing with clay as a kid and will doing a lot more of it in the future Cheesy
